French Onion Soup | When served with a Cesare Salad it is a great light dinner anytime of the year. There some spectacular hard kosher cheeses for grating that contribute to the quality. |
Ingredients4 sweet onions, thinly sliced
4 oz. olive oil
2 tbs. flour
1/2 cup white wine
1 quart beef consommé (parve)
Grated parmesan cheese
Toasted and sliced French bread
Preparation1) In a saucepan, brown the onions in the fat, sprinkle with flour, and stir while it simmers for 10 minutes.
2) Deglaze with white wine.
3) Add hot consommé it to the onions and let boil slowly until the onions are tender.
4) Melt the cheese on the toast.
5) Pour the soup into a hot soup tureen.
6) Cover with the toast and serve immediately.
Variations include substituting:
• Cheese: mozzarella, Swiss, or gruyere
• Broth: vegetable stock, parve chicken broth
• Wine: burgundy, port wine, sherry
• Bread: rye, baguettes, croutons
